Описание приготовления:
Приготовить икру из баклажанов на зиму "Пальчики оближешь" очень просто. Овощи тушатся, а затем измельчаются при помощи блендера до однородного состояния. Такую закуску можно и не доводить до состояния пюре, а оставить ее в виде небольших кусочков овощей. Оба варианта получаются превосходными. В первом варианте икру удобнее подавать на кусочке свежего хлеба, а во втором можно преподнести к столу в виде закуски, как дополнение к основным блюдам. В любом случае — это один из самых вкусных вариантов домашней баклажанной икры на зиму. Берите рецепт на заметку!

Баклажаны — 1300 Грамм (вес очищенных)
Морковь — 400 Грамм
Лук — 500 Грамм
Растительное масло — 125 Миллилитров
Томатная паста — 125 Грамм
Уксус столовый — 1 Ст. ложка
Сахар — 1 Ст. ложка
Соль — 1 Ст. ложка
Перец черный молотый — 1/2 Чайных ложки
Вода — 500 Миллилитров
Количество порций: 12-16
Как приготовить «Икра из баклажанов на зиму "Пальчики оближешь"»
Подготовьте все ингредиенты.
Все овощи измельчаем произвольно, так как мы их в итоге превратим в однородное пюре. Нарежьте лук и обжарьте на половине нормы масла до мягкости.
Добавьте томатную пасту и тушите около трех минут.
Отдельно, на оставшемся масле, обжарьте до мягкости морковь. Я натерла морковь на крупной терке.
В глубокую посуду с толстым дном (у меня казан) выложите нарезанные баклажаны.
Добавьте лук с томатной пастой и морковь. Влейте воду, перемешайте и тушите 1 час. Каждые 15 минут овощи перемешивайте.
За 15 минут до готовности добавьте соль, сахар, перец и уксус.
Затем измельчите овощи до состояния однородного пюре при помощи погружного блендера. Поставьте емкость опять на плиту и доведите до кипения. Как только масса закипит — готово.
Переложите овощное пюре в чистые стерилизованные баночки. Из указанного количества выходит примерно три баночки по 500 мл. Банки закрутите стерильными крышками, переверните и укутайте до остывания.
