Аппетитную домашнюю ветчину можно подать на праздничный стол, на фуршет или просто как нарезку для бутербродов. Она отлично держит форму и ее можно взять с собой даже на работу, в поездку или на пикник. Чтобы приготовить ветчину, допустимо использовать свиную голову, очищенную и промытую, либо несколько свиных рулек.

Голова свиная — 6 Килограмм
Чеснок — 4-5 Зубчиков
Соль — 1/2 Чайных ложки
Перец черный молотый — 1/4 Чайных ложки
Лавровый лист — 3-4 Штук
Приправа для мяса — 1 Чайная ложка
Количество порций: 4-6
Как приготовить «Домашняя ветчина в пакете из-под сока»
Подготовьте указанные ингредиенты. Голову или несколько рулек тщательно промойте в воде и соскоблите с кожи грязь. Еще раз промойте.
Выложите части головы или рульки в кастрюлю, добавьте лавровые листья и залейте их водой. Отварите примерно 20 минут и снимите выделившуюся пену. Затем нагрев убавьте до умеренного, прикройте емкость крышкой и варите примерно 2-2,5 часа до мягкости мяса и кожи.
Спустя указанное время аккуратно извлеките все на доску или рабочую поверхность. Дайте слегка остыть и снимите мясо и кожу с костей, кости удалите. Остальное аккуратно разберите на части.
Отложите несколько кусков отварного мяса, а остальное пропустите через мясорубку.
Добавьте заранее отложенное отварное мясо, всыпьте соль, приправу, молотый черный перец. Очистите и спрессуйте в емкость чесночные зубчики. Аккуратно все перемешайте. Влейте 5-6 ст.л. бульона, в котором варилось мясо и еще раз перемешайте. Масса должна получиться не слишком густой.
Выложите мясную массу в промытый пакет из-под сока по частям, слегка утрамбовывая, чтобы выпустить воздух.
Поместите пакет с мясом в холодильник на 4-6 часов, а еще лучше, оставьте его на ночь. Ветчина отлично застынет. Аккуратно разрежьте по краю пакет из-под сока и извлеките ветчину на тарелку.
Нарежьте мясную ветчину на части и подайте к столу с горчицей в зернах, свекольным хреном, другими соусами или сметаной. Источник
