Буженина в ветчиннице

Домашние деликатесы готовить легко и просто. Если вы обладатель ветчинницы, то возьмите на заметку простой рецепт приготовления буженины. Готовить ее можно из любого мяса. Я предлагаю из свинины.

Описание приготовления:

В отличном результате важную роль играет качество мяса. Н втором месте — уплотнение его в ветчинницу. Поэтому отдайте предпочтение цельному куску. А также обязательно хорошо охладите. Я предложила один из самых простых вариантов буженины в ветчинницы. Фантазируя со специями, вы добьётесь наилучшего для вас результата.

Основной ингредиент:
Мясо / Свинина
Блюдо:
Закуски

Ингредиенты:

Свинина — 1,3 Килограмма (любая часть, цельный кусок)
Соль — 26 Грамм
Острый перец — 1/4 Чайных ложки
Специи — 1 Чайная ложка (для мяса)
Перец черный — 1/2 Чайных ложки (молотый)

Как приготовить «Буженина в ветчиннице»

Подготовьте необходимые ингредиенты.

Свинину промойте. Обсушите бумажным полотенцем. Натрите со всех сторон специями и солью. Выложите в чашу.

Затяните чашу плёнкой. Уберите в холодильник на 8 часов для маринования.

По истечении времени подготовьте ветчинницу. Внутрь вложите полиэтиленовый пакет и пакет для запекания. Края пакетов должны свисать из ветчинницы.

Переложите мясо в ветчинницу. Максимально утрамбуйте его. Особенно, если у вас несколько кусков мяса. Утрамбовка очень важна тем, чтобы в дальнейшем буженина не рассыпалась при нарезке.

Каждый вложенный пакет завяжите по отдельности. Предварительно выпустив из него воздух.

Вложите крышку ветчинницы, закрепите пружинами.

Возьмите большую кастрюлю. На дно выложите ткань. Положите на бок ветчинницу и залейте водой так, чтобы ветчинница полностью была покрыта жидкостью. Поставьте на средний огонь, доведите до кипения и убавьте огонь до малого. Варите 1 час 30 минут. По истечении времени выключите огонь, слейте воду.

Достаньте ветчинницу, переложите ее на доску. Оставьте охладиться при комнатной температуре, после перенесите в холодильник и выдержите 6-8 часов.

По истечении времени буженину извлеките из ветчинницы. Нарежьте на кусочки острым ножом.
