Большую форму для запекания смажьте маслом. Нагрейте духовку до 180°.

Сливки, бульон, чеснок, мускатный орех и половину сыра доведите до едва заметного кипения и уварите примерно на одну треть. Снимите с огня, добавьте шпинат, приправьте черным перцем.

Свеклу очистите и нарежьте тонкими кружками (около 5 мм). Половину уложите слоями в форму, залейте половиной сливочно-сырного соуса, повторите слои свеклы и соуса. Запекайте 45 минут, посыпьте оставшимся сыром, подержите в духовке еще 10–15 минут – до золотистой корочки и закипания соуса.
