Кёфте — блюдо из восточной кухни. Что-то вроде фрикаделек или котлеток из мяса. В этом рецепте предлагаю попробовать не менее популярную вегетарианскую версию блюда из чечевицы.
Описание приготовления:
Ниже я расскажу подробнее, как приготовить кёфте из чечевицы. Булгур в идеале использовать мелкого помола, тогда его можно не варить, а просто запарить кипятком и оставить на 10-15 минут. Чечевицу используйте красную, она быстро разваривается и дает нежную текстуру. Количество специй, зелени и лимонного сока можно отрегулировать на свой вкус. Кёфте получаются не только вкусными и ароматными, но еще и очень сытными, благодаря белку из чечевицы.

Промойте чечевицу, переложите в кастрюлю и влейте горячую воду. Доведите до кипения, затем варите на небольшом огне 15 минут.
Когда чечевица почти разварится, добавьте булгур. Перемешайте. Варите крупу с чечевицей еще 15-20 минут, под крышкой, пока булгур не станет мягким.
В сковороде обжарьте мелко нарезанный репчатый лук, затем добавьте томатную и все специи. Потушите все вместе еще 1-2 минуты.
Остудите готовую чечевицу с булгуром. Добавьте томатную пасту с обжаренным луком, хорошо перемешайте. Затем добавьте мелко порубленную зелень, соль и лимонный сок по вкусу. Еще раз все перемешайте.
Сформируйте из получившейся массы котлетки руками или с помощью ложки для мороженого.
