Лучше всего заготавливать морковную ботву пока она молоденькая и нежная. Но и довольно большая ботва очень ароматная и полезная. Ее можно добавлять в суп, овощные гарниры, в маринады и овощные салаты.

Как приготовить «Морковная ботва на зиму»
Подготовьте морковную ботву для хранения. Ее нужно перебрать, удаляя черешки, сполоснуть и обсушить.
Первый способ один из моих любимых, при нем зелень не теряет свой цвет и аромат. Ботву тонким слоем разложите на тарелку, которая подойдет для микроволновой печи. Поставьте в печку и установите таймер на 1 минуту, при мощности 800 Вт. Затем переворачивайте ботву и продолжайте сушить по 30 секунд, проверяя каждый раз, как она высохла. Не ставьте время сразу много, высохшая ботва может загореться.
Сухую ботву достаньте из микроволновки и перетрите руками, чтобы измельчить. Пересыпьте в сухие баночки и закройте.
Второй способ — заморозка. Для этого ботву измельчите, положите в пакет и плотно завяжите. Прекрасно подойдут пакеты с застежкой зип-лок. Уберите в морозильную камеру и полностью заморозьте.
Третий способ — соление. Ботву моркови измельчите, всыпьте соль, все перемешайте.
Плотно разложите соленую ботву по чистым сухим банкам и закройте крышками.
