Для многих, соус к макаронам должен быть непременно с мясом. Между тем, итальянцы считают лучшими спутниками пасты овощи или морепродукты. А уж они то знают толк во вкусных соусах к макаронам!
Описание приготовления:
Предлагаю приготовить соус из баклажанов со сметаной — очень вкусный! Не поленитесь очистить баклажаны от кожицы — вкус соуса будет намного лучше.
Разогрейте масло и выложите лук и чеснок. Жарьте, помешивая, до легкой позолоты. Посолите слегка. Извлеките чеснок.
Выложите баклажаны в сковороду к луку. Жарьте 3 минуты, помешивая.
Добавьте тонко нашинкованный сладкий перец и жарьте до мягкости баклажанов, еще минуты 3-4.
Добавьте сметану, перемешайте и прогрейте пару минут. Посолите и поперчите по вкусу.
Параллельно с приготовлением соуса сварите макароны до состояния аль-денте. Откиньте на дуршлаг, сохранив примерно стакан отвара.
Отрегулируйте густоту соуса по вкусу, добавляя понемногу отвар от макарон. Добавьте рубленый базилик, перемешайте и снимите соус с огня.
Разложите макароны по тарелкам и щедро полейте соусом. При желании и наличии присыпьте блюдо сверху тертым пармезаном, украсьте листочками базилика и сразу подавайте к столу.
