В сковороде разогрейте масло. Выложите нарезанный кубиками лук и тертую морковь.
Обжарьте овощи до мягкости.
Добавьте тертую свеклу.
Тушите помешивая 5-7 минут.
Затем добавьте тертые на крупной терке огурцы.
Продолжайте готовить еще пару минут. Влейте рассол, и тушите овощи на небольшом огне 15-20 минут.
Переложите содержимое сковороды в кастрюлю. Добавьте картофель и влейте необходимое количество воды или бульона. Добавьте специи по вкусу, отрегулируйте на соль и варите до готовности картофеля. В конце добавьте измельченный чеснок и зелень. Дайте покипеть пару минут, затем снимите кастрюлю с огня и дайте супу настояться 15-20 минут. Борщ без капусты с солеными огурцами готов.
