Овощное гаспачо получится у всех с первого раза, если у вас в наличии есть блендер или измельчитель. Первое блюдо подают к столу охлажденным, а в летнее время в него добавляют еще и кубики льда.
Описание приготовления:
Охлажденный гаспачо подавайте к столу с несладкой выпечкой: багетом, чиабаттой, лавашом и т.д. По желанию овощи, кроме огурца, вы сначала можете запечь в духовке примерно 20 минут, получая блюдо с привкусом дымка.
Помидоры залейте кипятком и оставьте на 5-6 минут, затем очистите их от кожуры, вырезая зеленые сердцевинки. Нарежьте мякоть ломтиками в чашу блендера или измельчителя. Очистите и промойте красный лук, нарежьте его половину кубиками и добавьте в емкость.
Очистите свежий огурец от кожуры и промойте его в воде. Если плод позднего сорта, то удалите и семена. Нарежьте мелкими кубиками и добавьте в емкость к остальным нарезкам.
Болгарский перец очистите от семян и промойте, нарежьте мелким кубиком. Если не любите, чтобы шкурка овоща попадалась в супе, то предварительно запеките перец и очистите его от кожуры и семян. Очистите и зубчики чеснока, промойте, измельчите. Добавьте обе нарезки в емкость.
Всыпьте соль, молотый черный перец и влейте лимонный сок. Отпюрируйте содержимое емкости примерно 3-5 минут, используя пульсирующий режим, чтобы все превратилось в однородную массу.
Вылейте приготовленный гаспаччо в тарелку и украсьте по своему вкусу. Сбрызните качественным растительным маслом, желательно — оливковым холодного отжима.
Остудите первое блюдо в холодильнике примерно 30 минут и подайте к столу. Источник
