Делюсь одним из способов заготовки кабачков на зиму с огурцами по-корейски. Пока сезон, рекомендую обязательно попробовать закатать пару баночек.
Описание приготовления:
Ниже я расскажу подробнее, как приготовить кабачки с огурцами по-корейски на зиму. Кабачки выбирайте молоденькие, с тонкой кожицей без повреждений и мягкими семенами. Огурцы выбирайте засолочных сортов. По желанию можно добавить зелень (кинзу, петрушку) для аромата. Получается оригинальная закуска-салат: сочная, пикантная и ароматная. Такая заготовка сможет разнообразить повседневное меню зимой.
Кабачок помойте, натрите на крупной терке для моркови по-корейски вместе с кожицей. Мягкую часть с семенами предварительно отрежьте.
Морковь помойте, очистите от кожуры и тоже натрите на терке для моркови по-корейски.
Огурцы помойте, отрежьте хвостики и нарежьте мелкими брусочками. Я использую фигурный нож.
Добавьте приправу для моркови по-корейски, измельченный чеснок, соль, сахар, растительное масло и уксус. Перемешайте и оставьте на 2 часа, чтобы овощи пустили сок.
Разложите закуску в чистую стерилизованную банку. Прикройте крышкой, затем поставьте в холодную духовку. Включите ее на 150 градусов и стерилизуйте закуску 15-20 минут.
Закатайте герметично банку, переверните вверх дном и так оставьте до полного остывания.
