Прозрачный яблочный мармелад — идеальная начинка для пирогов, пончиков и булочек.

Как приготовить:

  1. Яблоки вымойте, разрежьте на половинки, очистите от кожуры и семян. Нарежьте очищенные яблоки мелкими кубиками и выложите в большую эмалированную кастрюлю.

  2. Посыпьте кусочки яблок сахаром и залейте уксусом, перемешайте, накройте полотенцем и оставьте на 12 часов в прохладном помещении. Периодически перемешивайте яблочную массу деревянной лопаткой.

  3. Затем поставьте кастрюлю на огонь, доведите до кипения на среднем огне.

  4. Уменьшите огонь и варите яблоки в течение 1,5 часов, периодически помешивая. Будьте осторожны: яблочная масса кипит и булькает.

  5. Горячую яблочную массу снимите с огня и осторожно протрите через сито, чтобы получить однородное варенье, или оставьте с кусочками. Протертую массу снова доведите до кипения и выключите огонь.

  6. Сразу разложите горячий мармелад по заранее стерилизованным банкам и закатайте крышками. Переверните банки и дайте им остыть.

Яблоки для мармелада выбирайте кисло-сладких сортов.
