ИНГРЕДИЕНТЫ

  • свекла печеная 600 г
  • горчица столовая 250 г
  • хрен сливочный 250 г
  • вода минеральная 1 л
  • уксус яблочный 30 г
  • соль 15 г
  • яйцо 1 шт.
  • редис 20 г
  • огурцы 20 г
  • сметана 300 г
  • опилки 2 щепотка(и)

ПОШАГОВЫЙ РЕЦЕПТ ПРИГОТОВЛЕНИЯ

Шаг 1

Запекаем свеклу в печи 2 часа при 200 градусах. Нарезаем овощи слайсами и варим яйца.
После нарезки слайсами режем овощи соломкой.
Белки также режем соломкой

Сметану в ресторане коптим. В сотейник высыпаем опилки, ставим сверху сито и на сито ставим маленькую емкость со сметаной. Нагреваем сито на плите и поджигаем опилки. Накрываем крышкой, даем опилкам задымиться. Высьавляем сито с блюдцем для сметаны и накрываем крышкой, чтобы сметана впитала копченый аромат в течение 5-7 минут.

Шаг 4

Сервируем. Наливаем базу из свеклы, выкладываем белок, огурец, редиску, зелень и добавляем сметану.
