Ниже я расскажу подробнее, как приготовить вяленые томаты длительного хранения без холодильника. Для этого томаты после сушки подвариваются в растворе с уксусом и заливаются горячим оливковым маслом. Помидоры выбирайте плотные, мясистые, с толстой кожурой. Среднего или небольшого размера. Идеально подойдёт сорт сливка. Вместо тимьяна вы можете взять сушёные итальянские травы, а для остроты добавить пару колечек красного перца. Винный уксус можно заменить на яблочный. Томаты получаются ароматными, с ярким насыщенным вкусом. Их можно добавлять в салаты, пасту или соусы, но вкуснее всего есть просто так!
Выложите томаты срезом вверх на противень, присыпьте солью. Сушите помидоры в разогретой до 120 градусов духовке. По времени на это может уйти от 5 до 12 часов, в зависимости от размеров помидоров. Полностью готовы томаты будут тогда, когда при нажатии не будут выделять влагу. На этом этапе можно вырезать ножницами плодоножки. Также можно высушить помидоры в сушилке.
Вскипятите воду с уксусом. Приварите томаты 2-3 минуты.
Выложите на бумажные полотенца и подсушите ещё 2-3 часа при комнатной температуре.
На дно чистой стерилизованной баночки выложите чеснок, тимьян и все специи.
Плотно уложите томаты в банку.
Оливковое масло нагрейте, но не доводите до кипения. Влейте его в банку. Плотно закройте.
Хранить такие вяленые томаты можно при комнатной температуре. Источник
