Восточная сладость «Лукум»

Предлагаю приготовить одну из самых известных восточных сладостей — лукум, кондитерское изделие в виде мягких, полупрозрачных сахарно-крахмальных кубиков.

Ингредиенты:

Вода — 1,5 Штуки (для лукума)
Сахар — 1,5 Стакана (для лукума)
Фруктовый сок — 1 Стакан (для лукума)
Кукурузный крахмал — 1 Стакан (для лукума)
Лимонный сок — 3 Ст. ложки (для лукума)
Кукурузный крахмал — 3 Ст. ложки (для обсыпки)
Сахарная пудра — 1 Ст. ложка (для обсыпки)

Количество порций: 10

Как приготовить «Восточная сладость "Лукум"»

Подготовьте ингредиенты, объем стаканов 250 мл. Приступим!

Возьмите глубокую удобную кастрюлю. Насыпьте стакан крахмала и 1,5 стакана сахара. Перемешайте.

Добавьте воду и фруктовый сок.

Очень хорошо венчиком перемешайте массу. При постоянном и тщательном перемешивании доведите смесь до кипения. В процессе нагревания масса будет постепенно густеть, поэтому важно все время мешать, чтобы она не подгорела.

Когда по консистенции смесь станет напоминать довольно густой кисель, добавьте 3 столовые ложки свежевыжатого лимонного сока.

Варите будущий рахат-лукум на минимальном огне. Точное время я вам не скажу, но у меня уходит примерно минут 15-20. В результате масса приобретет прозрачность, станет тягучей и будет отходить от стенок кастрюли. Значит все готово.

Форму для лукума ополосните под водой, фруктовую массу быстро разровняйте ложкой. Заготовка очень быстро схватывается и застывает. Оставьте на столе до полного остывания (примерно часа вполне хватит). Затем дайте десерту стабилизироваться при комнатной температуре еще пару часов.

Десерт готов! Соедините ложку пудры с тремя ложками крахмала. Притрусите досочку пудрой с крахмалом. Осторожно переложите лукум на доску, десерт хорошо отходит от стенок стеклянной формы.

Осталось порезать лукум на кусочки. Острым ножом порежьте, каждый кубик обваливая в пудре с крахмалом.

Обваленные кусочки полностью готовы к употреблению. Мягкие и вкусные, нежно пружинящие.
