Азиатский суп с тыквой и брокколи

Делюсь рецептом овощного супа в азиатском стиле. На кокосовом молоке, с тыквой и брокколи. Он получается пряным, густым, согревающим.

Подробнее, как приготовить азиатский суп с тыквой и брокколи, я расскажу ниже. Кокосовое молоко выбирайте высокой жирности. В пряную пасту по желанию можно добавить 1 стебель лемонграсса. В супе очень вкусное сочетание ингредиентов, которое обязательно стоит попробовать!

Ингредиенты:

Овощной бульон — 750 Миллилитров
Кокосовое молоко — 200 Миллилитров
Рисовая лапша — 200 Грамм
Тыква — 500 Грамм
Брокколи — 300 Грамм
Лайм — 1/2 Штуки
Сахар — 1-2 Ст. ложек
Соевый соус — 1-2 Ст. ложек
Растительное масло — 1-2 Ст. ложек
Перец чили — 1-2 Штук
Чеснок — 5-6 Зубчиков
Лук шалот — 1 Штука
Имбирь — 20-40 Грамм
Кориандр — 1/2 Ст. ложки
Куркума — 1 Чайная ложка
Карри порошок — 1 Чайная ложка
Кинза — 1/4 Пучка
Лук зеленый — 1/4 Пучка

Количество порций: 2-4

Как приготовить «Азиатский суп с тыквой и брокколи»

Подготовьте все ингредиенты.

Тыкву нарежьте кубиками, сбрызнете растительным маслом и соевым соусом, запекайте в заранее разогретой до 225 градусов духовке 30 минут.

Брокколи разберите на соцветия, крупные разрежьте пополам. Обжарьте брокколи на сковороде по 2-3 минуты с каждой стороны.

Лапшу отварите по инструкции.

Для пряной пасты измельчите в блендере чеснок, корень имбиря, шаллот, кинзу и перец чили с небольшим количеством воды. Добавьте кориандр, куркуму и порошок карри.

Обжарьте пасту в кастрюле с небольшим количеством растительного масла примерно 5 минут, постоянно помешивая. Затем влейте овощной бульон и кокосовое молоко. Добавьте выжатый сок лайма и сахар.

Выложите в миску лапшу, залейте супом.

Сверху выложите кусочки тыквы и брокколи. Посыпьте суп рубленной зеленью и кружочками перца чили.
