Хочу предложить приготовить кабачковую икру с помидорами на зиму. Икра получается настолько вкусная, что её действительно хочется есть ложками.
Описание приготовления:
Мороки с этим рецептом совершенно нет. Нет необходимости измельчать овощи ножом, так как все ингредиенты перемалываются мясорубкой. Так же овощи не обжариваются по отдельности, а совершенно без вашего участия долго-долго тушатся-запекаются в духовке. Вкус такой икры очень похож на покупную. По желанию икру можно не закатывать, а просто вынести на мороз и заморозить. Конечно же такую заготовку лучше всего готовить ближе к зиме, когда все овощи со своего огорода. В оригинальном рецепте сахара в ингредиентах нет, я тоже не стала указывать, возможно вас полностью устроит такой вариант. Сама же я для более гармоничного вкуса немного подслащиваю икру в самом конце, как правило на глаз или если точнее сказать — по вкусу. Из указанного количества ингредиентов выходит примерно 2 баночки по 500 грамм.
Добавьте томатный соус, соль, масло и перец по вкусу.
Хорошо перемешайте.
Переложите овощную массу в любую подходящую по размерам жаропрочную форму. Накройте сверху плотно фольгой или крышкой, если такая имеется и отправьте в разогретую до 220 градусов духовку примерно на 3-4 часа. Время может варьироваться и в зависимости от объёма и от особенностей духовки.
Примерно через час-полтора икру можно достать, перемешать и отрегулировать на свой вкус. А если вы уменьшите температуру в духовке, то можно икру оставить томиться на всю ночь, что очень удобно. Вот так у меня выглядела готовая икра через 3,5 часа.
Переложите икру в стерилизованные банки и закрутите стерильными крышками. Переверните и укутайте до полного остывания. После чего уберите для хранения в любое тёмное и прохладное место.
Кабачковая икра с помидорами на зиму готова. Это очень вкусно и к тому же не сильно калорийно. Приятного аппетита! Источник
