Заготавливаем помидоры половинками с луком и чесноком на зиму. Разрезанные помидоры просаливаются намного быстрее целых плодов, также они имеют приятный салатный вкус.
Описание приготовления:
Для приготовления помидоров половинками используется классический рецепт без стерилизации. Пастеризация томатов в банках сделает их очень мягкими, а по данному рецепту они останутся твердыми и упругими. Для этого помидоры выбирайте с плотной кожицей, плотные. Количество продуктов указано на 2 банки объемом 500 мл.

Помидоры — 1 Килограмм
Вода — 500 Миллилитров
Растительное масло — 2 Ст. ложки
Уксус 9% — 2 Ст. ложки
Сахар — 3 Ст. ложки
Соль — 2 Ст. ложки
Лук — 2 Штуки
Чеснок — 4-6 Зубчиков
Гвоздика — 2 Штуки
Лавровый лист — 4 Штуки
Перец горошком — 6-8 Штук

Как приготовить «Помидоры половинками без стерилизации на зиму»
Подготовьте необходимые овощи и специи. Помидоры используем качественные, небольшого размера, отлично подойдет сорт "Сливка".
Помидоры тщательно вымойте несколько раз в холодной воде, слегка их просушите. Каждый помидор разрежьте на две продольные части.
Лук очистите, нарежьте крупными кольцами. Чеснок отшелушите, оставьте в целом виде или разрежьте пополам.
Заранее простерилизуйте тару для хранения. Это можно сделать любым удобным для вас способом — кипячение, стерилизация паром, в духовке или СВЧ-печи. Крышки прокипятите в воде 5 минут. Банки и крышки обязательно полностью высушите. Помидоры выложите в банки чередуя с кружочками лука. Томаты необходимо выкладывать срезом вниз. Также в банку выложите чеснок.
Параллельно приготовьте маринад. Воду вскипятите в кастрюле, добавьте соль, сахар, перец горошком, лавровый лист, гвоздику, кипятите 3 минуты.
В конце влейте уксус и растительное масло, снимите с огня.
Горячим маринадом залейте овощи в банках. Дайте выйти пару и пузырькам воздуха. Сразу закрутите банку винтовыми крышками, переверните на бок, проверяя на герметичность. Если маринад просачивается, жидкость следует слить в кастрюлю, заново прокипятить и вернуть в банку, повторить процесс закатки.
Во время остывания укатывать банки не нужно, иначе помидоры станут очень мягкими. Примерно через сутки заготовку можно отправить на полку кладовой до зимы. Удачных заготовок! Источник
