Классический рецепт бефстроганова из говядины со сметаной

Разогрейте духовку до 180°С. Подготовьте рыбу: выпотрошите, очистите (при необходимости), срежьте плавники, промойте, сделайте несколько поперечных неглубоких надрезов острым ножом. Выложите рыбу на противень, смажьте оливковым маслом, посыпьте солью и перцем, запекайте под грилем 20–30 минут.

Через 10 минут влейте в противень белое вино.

Кускус выложите в глубокую миску, залейте кипятком (он должен покрыть крупу), накройте тарелкой и оставьте на 10 минут. Приготовьте заправку из оливкового масла, зеленого лука, сока и цедры лимона, добавьте к кускусу. Выложите курагу и перемешайте.

Подавайте рыбу с гарниром из кускуса, полив соусом от запекания.
