ИНГРЕДИЕНТЫ

Начинайте готовить за 3 недели до подачи

  • 1 кг сырого свиного сала на коже (лучше всего корейки)
  • 2/3 стакана крупной соли
  • 4 зубчика чеснока
  • 1 ч. л. сушеного базилика
  • 1 ч. л. тмина
  • 1 ч. л. свежемолотого черного перца
  • 3 лавровых листа

ПОШАГОВЫЙ РЕЦЕПТ ПРИГОТОВЛЕНИЯ

Шаг 1

Промойте сало в холодной воде, промокните бумажным полотенцем и разрежьте на 4–5 частей.

Кончиком острого ножа сделайте в сале небольшие, довольно глубокие разрезы и нашпигуйте эти разрезы чесноком. Натрите сало смесью соли и специй.

Шаг 4

Подготовленные куски положите в сухую эмалированную посуду кожей вниз. Между кусками проложите лавровым листом. Накройте сало деревянным кружком, прижав сверху гнетом. Посуду накройте крышкой и поставьте в холодное место. Сало будет готово через 3 недели.

Кстати

Чтобы сало лучше просолилось, переворачивайте куски каждые 2–3 дня
