Ингредиенты

Кабачки или цукини	4 Штуки
Перец сладкий (красный)	1 Штука
Помидор	1 Штука
Луковица небольшая	1 Штука
Фасоль консервированная	150 Граммов
Кукуруза консервированная	100 Граммов
сыр тертый	70 Граммов
Масло растительное	1 Столовая ложка
Соль	1 Щепотка
Перец ( чили ) 2-3 щепотки	Банка

Для начинки кабачков по этому рецепту можно использовать готовую замороженную мексиканскую овощную смесь.

Как приготовить:

Молодые кабачки или цукини вымойте, разрежьте вдоль пополам. Ложкой выберите мякоть,чтобы получились лодочки. Мякоть мелко нарежьте.

Опустите лодочки из кабачков в кастрюлю с кипящей подсоленной водой и бланшируйте 2 минуты. Выньте и обсушите кабачки на бумажном полотенце.

Классический рецепт бефстроганова из говядины со сметаной

Для начинки лук и морковь очистите, лук порубите, морковь натрите на крупной терке. У перца удалите семена, мякоть мелко нарежьте.

Помидор опустите в кипящую воду на 1 минуту, снимите кожицу, мякоть мелко нарежьте.

На сковороде с растительным маслом обжарьте лук, 2 минуты, добавьте морковь, мякоть кабачков и помидора, сладкий перец, посолите и жарьте, помешивая, 5 минут.

Снимите овощную смесь с огня, добавьте консервированную фасоль и кукурузу, тертый сыр, приправьте острым перцем по вкусу и перемешайте.

Половинки кабачков наполните овощной начинкой и выложите на противень, выстланный бумагой.

Поставьте в духовку, разогретую до 180 °C, и запекайте 20 минут.

Кабачки, запеченные с овощной начинкой, можно подавать и горячими, и холодными.
