По желанию при приготовлении соуса вы можете вмешать в него молотый острый перец либо поместить стручок перца чили, извлекая после варки, чтобы блюдо не получилось чрезвычайно острым. Если вкус соуса слишком горьковат, то тогда лучше его остудить.
Помидоры опустите в кипяток на 5 минут, затем удалите кожуру и натрите их на терке с крупными ячейками.
Лук и чеснок очистите от кожуры и промойте в воде, нарежьте мелкими кубиками. Прогрейте в казане растительное масло, желательно — оливковое, и высыпьте в емкость обе нарезки. Обжарьте на умеренном нагреве примерно 2-4 минуты.
Влейте томатную массу и потушите все примерно 5-8 минут, пока масса не сменит цвет.
Посолите, поперчите массу и всыпьте сахар. Аккуратно все перемешайте и попробуйте соус на вкус. Он должен иметь характерный чесночный привкус.
