Сочные пикантные помидоры на зиму можно заготовить без добавления уксуса — с лимонной кислотой. Овощи получатся солеными, в меру кисловатыми, с ярким ароматом сельдерея и прочих пряностей, специй!
Описание приготовления:
Расчет ингредиентов указан на две литровых емкости и три емкости по 500 мл. Вкусные помидоры без уксуса можно заготовить на зиму с лимонной кислотой. Главное — не переборщить с такой добавкой, чтобы помидоры не получились слишком кислыми на вкус. Если такое и произойдет, то просто добавьте в маринад сахарный песок.

Помидоры — 2 Килограмма
Чеснок — 7-8 Зубчиков
Перец черный горошек — 35 Штук
Вода горячая — 1 Литр
Соль — 1,5 Ст. ложки (без горки)
Масло растительное — 2 Ст. ложки
Лимонная кислота — 1/4 Чайных ложки
Сельдерей — 1/2 Пучка (зелень)
Количество порций: 4-6
Как приготовить «"Мамины" помидоры на зиму без уксуса»
Подготовьте указанные ингредиенты. Лучше всего приобретать томаты сорта "Сливка", они отлично держат форму.
Помидоры промойте в воде и выложите как можно плотнее в промытые чистые банки.
Очистите чесночные зубчики от шелухи, промойте в воде вместе с веточками сельдерея. Выложите в банки.
Вскипятите воду и влейте кипяток в банки. Накройте банки крышками, и пропарьте томаты 10 минут. Закручивать крышки не нужно!
Всыпьте соль, лимонную кислоту в кастрюлю и добавьте горошины черного перца. Если решите добавить другие специи, то сделайте это на этом этапе. Слейте воду из банок с томатами в кастрюлю, долейте еще 100 мл. и вскипятите. Соль должна полностью раствориться. Влейте в горячий рассол растительное масло и перемешайте.
Поочередно заливайте маринад в банки с пропаренными томатами и сразу закручивайте их крышками по резьбе или с помощью ключа для консервации. Таким образом законсервируйте и остальные банки. Оставьте их при комнатной температуре остывать на 2-3 часа. После этого перенесите в место хранения.
