Шведский ягодный джем — Sylt, пошаговый рецепт с фото

ИНГРЕДИЕНТЫ

1 кг клюквы или брусники (свежей или замороженной)
600 г сахара
2-3 веточки тимьяна (по желанию)

ПОШАГОВЫЙ РЕЦЕПТ ПРИГОТОВЛЕНИЯ

Шаг 1

Ягоду по возможности перебрите и сполосните. Поместите вместе с веточками тимьяна в широкий сотейник и поставьте на сильный огонь. Как только выделившийся сок закипит, убавьте огонь до слабого (ближе к среднему), прикройте сотейник крышкой и засеките 10 минут. Через указанное время перемешайте и готовьте под крышкой еще 5-10 минут, в зависимости от толщины стенок ягоды.

Снимите сотейник с огня и вмешайте деревянной ложкой сахар. Перемешивайте до тех пор, пока сахар полностью не растворится, стараясь не повредить целые ягоды.

Остудите джем до комнатной температуры и перелейте в баночку. Sylt прекрасно хранится и без холодильника, но лучше все-таки съесть его поскорее, чтобы сварить новую порцию.

Кстати

На этапе варки ягод можно добавить любые специи или пряные травы по вкусу. Например, тимьян к клубнике, розмарин к смородине или можжевельник к бруснике. Ваниль, звездчатый бадьян, кардамон и даже кориандр бывают очень кстати в ягодном джеме.
