Сытный фасолевый суп готовят в прохладное время года и подают его со сметаной, майонезом. Можно добавить различные колбасные изделия или копчености — блюдо получится очень вкусным и ароматным!
Описание приготовления:
Чтобы ускорить время варки фасоли, заранее замочите ее на 3-6 часов в кипятке либо горячей воде вне зависимости от сорта. Помните, что бобовые увеличиваются при варке в три раза, но варить их лучше в нескольких водах, поэтапно их сливая. Многие добавляют немного соды, однако она дает обильную пену! Не забывайте про лавровый лист, сушеный тимьян, другие пряности.

Фасоль промойте в воде, высыпьте в глубокую миску и залейте кипятком или горячей водой. Оставьте минимум на 2 часа, максимум — на ночь при комнатной температуре. За это время бобовые впитают в себя практически всю жидкость. Слейте ее и промойте фасоль еще раз.
Всыпьте фасоль в кастрюлю или казан, залейте горячей водой и отварите на сильном нагреве примерно 15 минут, затем воду слейте. Влейте 1,3 литра кипятка, всыпьте соль, лавровые листья и отварите бобовые до готовности примерно 40 минут.
Картофель очистите от кожуры, промойте в воде и нарежьте средними кубиками. Всыпьте в емкость к фасоли, отварите еще 10 минут.
Очистите морковь и лук от кожуры, промойте в воде, нарежьте лук мелким кубиком, а фасоль натрите на терке с мелкими ячейками. Отпассеруйте овощи на сковороде в растительном масле примерно 3-4 минуты, затем добавьте туда же томатную пасту и обжарьте еще 1 минуту.
Выложите зажарку с томатной пастой в кастрюлю с отваренными фасолью и картофелем. Отварите еще 5 минут.
Всыпьте измельченную зелень петрушки либо укропа и попробуйте первое на вкус. При необходимости добавьте немного сушеного тимьяна, приправы и готовьте суп еще 1-2 минуты.
Разлейте фасолевый суп в пиалы или тарелки, подайте с хлебом, сухариками, пампушками. Источник
