Предлагаю попробовать перлотто с овощами. Перлотто — разновидность итальянского ризотто, только вместо риса его готовят из перловой крупы.
Описание приготовления:
Ниже я расскажу подробнее, как приготовить перлотто с овощами. Из овощей также можно использовать цукини и баклажаны. По желанию в перлотто можно добавить тертый пармезан. Даже если вы не любите перловку, то все равно попробуйте приготовить это блюдо. Уж очень вкусным оно получается! Нежное, сливочное и кремовое.

Перловку промойте в холодной воде, затем замочите на 8 часов в холодильнике.
Лук-порей нарежьте полукольцами. Обжарьте в небольшом количестве масла до мягкости.
Добавьте промытую перловку. Влейте белое вино и дождитесь, когда оно выкипит на среднем огне.
Затем порционно начните вливать горячий овощной бульон. Варите перловку на среднем огне примерно полчаса, постоянно подливая овощной бульон.
Морковь очистите от кожуры, из перцев удалите семена. Нарежьте овощи ломтиками среднего размера. Обжарьте все овощи, кроме горошка, до мягкости. За минуту до готовности добавьте горошек, перемешайте.
Когда перловка будет почти готова, влейте сливки, добавьте овощи и сливочное масло. Посолите по вкусу. Аккуратно перемешайте, потомите все вместе 5 минут.
