Хочу предложить приготовить икру из цукини на зиму. Икра получается нежная, шелковистая и невероятно вкусная. Пожалуй, один из лучших рецептов, непременно попробуйте!
Описание приготовления:
Рецепт очень простой, а набор ингредиентов минимальный. Икра отлично хранится в условиях городской квартиры, до 6-7 месяцев. А в подполе или погребе — до двух лет. Конечно цукини можно заменить на кабачки, но на мой взгляд, из цукини икра мягче и благороднее на вкус. Если решите взять всё же для рецепта кабачки, то отдайте предпочтение молоденьким плодам, с нежной шкуркой. Попробуйте этот вариант икры хоть раз и она обязательно станет вашим фаворитом! Из указанного количества овощей выходит примерно 2,5 литра.

Базилик — 1 Чайная ложка (можно заменить на половину пучка свежего)

Как приготовить «Икра из цукини на зиму»
Подготовьте все ингредиенты.
Все овощи необходимо вымыть и очистить. Так как у цукини шкурка нежная, то я её не снимаю. Если вы возьмёте кабачок со зрелой шкуркой, то конечно её необходимо будет предварительно очистить. Нарезка произвольная, но не слишком крупно.
Лук нарежьте перьями, морковь натрите на тёрке. Соедините овощи в казане или в любой глубокой посуде с толстым дном.
Добавьте воду и масло. Тушите на среднем огне до тех пор, пока овощи слегка не уменьшатся в размере. Обычно уходит около 20 минут.
Затем добавьте сахар, соль и томатную пасту.
Тушите овощи 1,5 часа при медленном кипении, периодически перемешивая.
Затем измельчите всё погружным блендером до однородного состояния и добавьте базилик.
На этом моменте икру можно уже есть, но нам необходимо её уварить для хранения. Варите на маленьком огне ещё 30 минут, перемешивая. Будьте осторожны, икра брызжет, поэтому обязательно уваривайте икру под крышкой.
Переложите горячую икру в стерилизованные банки и закрутите стерильными крышками. Переверните и остудите "под шубой". Храните в тёмном и прохладном месте.
