Ниже я расскажу подробнее, как приготовить рататуй от Джейми Оливера. Если любите, то из трав можно добавить еще свежий зеленый базилик для аромата. Вместо кабачков можно взять цукини, они лучше сохранят форму. Все овощи готовятся на сковороде и потребуется меньше времени. Получается не менее вкусно, очень ароматно и сочно!

Лук нарежьте ломтиками, кабачок и баклажаны кружочками примерное по 1 см. Чеснок пропустите через пресс. Из сладких перцев удалите семена и хвостик, затем нарежьте их ломтиками среднего размера. Помидоры мелко измельчите.
Разогрейте сковороду на среднем огне с растительным маслом. Обжарьте баклажаны, перцы и кабачки минут 5-6, до легкого смягчения и золотистого цвета. Затем отложите овощи в большую миску.
В этой же сковороде обжарьте лук, чеснок и листики тимьяна. Овощи должны стать мягкими.
Верните обратно обжаренные баклажаны, кабачок и перцы. Добавьте свежие и протертые томаты. Затем добавьте соль, молотый черный перец и бальзамический уксус. Накройте сковороду крышкой, тушите на слабом огне полчаса.
